"late Edition for DME"

I saw this in a recipe for Wild Dogs of Summer Ale.......

"Late addition for 70% of DME"

So I assume this means only to put 30% DME in begginning,........


The other 70% goes in "late".....but how late typically? Maybe the last 20 minutes??

What is the purpose of the late addition?
 
10 to 20 mins is perfect.

The idea is to lower the boil gravity for most of the boil and thus help increase you hops utilization.
 
It can also keep the beer's color as light as possible. Extract will darken a bit the longer it is in the boil.
 
Do you have a bearby Home Brew Store?? GO buy a fermenter...their only like $15 !!!!

Yeah there's one down the street, but the SWMBO would kill me. Once the APA gets kegged I'll have some more leeway to brew another batch :)
 
This is why I am excited for summer vacation. My students are taking finals and will be done on Wednesday. Thursday = my last day, Friday = new tattoo, Saturday = brew day! Helluva start to summer vacation!
