Seems like putting a 212+ F pot into 32 F water could cause a good bit of shock on the aluminum/S.S. Is this anything to worry about? Should it be steeped down to 32 F water?

I figured it wouldn't be because it is still a relatively low temp for the aluminum/S.S and nowhere close to range needed to change the microstructure, just figured it is always good to ask.

It can be a problem if you have a stainless pot with a clad/sandwich bottom. If you shock it hard enough by putting it in icewater, it's possible the clad bottom can separate after repeated shock.

Glad to see your original question has been answered :)

Just wanted to clarify that an immersion chiller is not the same thing as immersing your boil kettle into an ice bath. An immersion chiller is a coil-shaped (usually) length of copper/stainless that you pump cold water through, and immerse into the wort.
