I just finished a Bavarian Hefeweisen, and the FG came out incredibly low--like 1.002 low. Everything went well and the beer tastes/smells right. There was a boil-over, but it wouldn't have taken out all of the fermentables. I used a drill-powered stir rod to oxegynate the wort. And it had a quick but vigorous fermentation. The yeast was Danstar Munich.

Could that be an accurate reading, or do you think my hydrometer is off?

I think it's probably off. Make sure your temp of sample is same as what hydrometer is calibrated at. Possible the paper scale in your hydrometer slipped down and is misreading too.

Only real way to get that low in beer is infection (unlikely if tastes and smells good) or lots of simple sugars in your recipe.
