Greetings from "wonderful" Berks County, PA!

Decided after a several-year hiatus it's time that I get back in to brewing! My father and my young son were my biggest helpers, and after a couple years of them asking me when I was going to start brewing again, I figured what the hell!

Two recipe kits coming my way, and I can hardly wait!
 
Welcome back to brewing!

To get you up to speed with some "modern day" homebrewing practices:
  • Secondaries are definitely taboo. Leave everything in the "primary." Ignore kit instructions that urge you to rack to secondary after xx days.
  • After fermentation starts, prevent the beer from having air (oxygen) contact as much as possible to prevent oxidation. No lifting lids, etc. Let your beer be for 2-3 weeks, avoid tinkering, it's unnecessary.
  • Use some form of fermentation temp control.
  • Read HBT!
