Looking for tips and feedback on making Graf in a SMaSH style.
So far I have made ciders but not beer. I want to make 1 gallon of graf using 0.5 gallon apple juice (cider) and 1 lb of DME (Breiss Pale Ale) along with an undecided amount of Cascade hops (maybe 0.5 oz).
I understand the hops/DME will need to boil, so I will boil 0.5 gallon of water and mix in the juice to aid in chilling afterwards.
Would I need an ale yeast for this project? I have cider house select yeast which are "estery".

Have you read this thread? Seems heavy on hops for what is recommended there. Just my opinion, but I would expect cider yeast to finish less dry than ale yeast, as how it would metabolize maltose is an unknown. I am considering a similar batch, using cider yeast, once weather is cooperative ( I don't have temperature control other than a swamp cooler).

I see, I should probably lower my hops amount. I am not interested in using grains at this point, but maybe I will produce a caramel to add some depth of flavor.
 
My final recipe/results:
Aerated 1 gallon of Musselman AJ with nutrient. Boiled 4 g bagged Cascade hop pellets in 3 quarts H2O for 30 mins then added Breiss Golden Light DME for 5 min. Cooled wort and moved to bucket w/ AJ and then took gravity, OG 1.055. Pitched Safale US 05 yeast.
Cold crashed after 3 days of primary ferment and bottled in 1 L plastic bottles with 0.3 oz sugar per. FG 1.011.
After 1 week I tried a bottle and found it had a bready, honey like aroma and some sweetness to taste. Quite nice!
