brigalow and juice bottle brewing from a noob

I have been reading about cider making and how easy it is.

And I thought if ask other people that have tried this method and what I should be looking for. I was planning on running these three to completion then maybe back sweetening and bottle aging. Not sure on what to back sweeten....lactose it maybe that health food one...... Any thought would be appreciated.

BTW these air locks are cheaper that Oz tops at my local HBS here in Hobart Tasmania

Hahaha I got bored one day and storyboarded the process for my friend who thought it was too hard... Video is in process now, just waiting for it to clear up. I even used bread yeast just to prove how way way way easy it is.

What's the strangest juice you have brewed. I've been told not to use citrus.
