I'm going for pretty dry, slightly malty, full headed IPA that showcases hops well.

Title: Hopstand: Nelson Citra Simcoe

Boil Size: 7 gallons

FERMENTABLES:
9 lb - American - Pale 2-Row (76.6%)
1 lb - German - Munich Light (8.5%)
0.5 lb - American - Carapils (Dextrine Malt) (4.3%)
0.75 lb - Cane Sugar (6.4%)
0.5 lb - American - Caramel / Crystal 20L (4.3%)

HOPS:
1 oz - Chinook for 60 min, Type: Pellet, Use: Boil (AA 13, IBU: 48.28)
1 oz - Simcoe for 10 min, Type: Pellet, Use: Boil (AA 12.7, IBU: 17.1)
1 oz - Simcoe for 5 min, Type: Pellet, Use: Boil (AA 12.7, IBU: 9.4)
1 oz - Citra for 0 min, Type: Pellet, Use: Boil (AA 11)
1 oz - Nelson Sauvin for 0 min, Type: Pellet, Use: Boil (AA 12.5)
1 oz - Citra for 7 days, Type: Pellet, Use: Dry Hop (AA 11)
1 oz - Nelson Sauvin for 7 days, Type: Pellet, Use: Dry Hop (AA 12.5)

MASH STEPS:
1) Infusion, Temp: 150 F, Time: 60 min
2) Fly Sparge, Temp: 170 F, Time: 60 min

Looks pretty good to me although I'd put some simcoe in the dry hop. Nelson plus citra might be a little fruity for me, but if that's what you want go for it. I also don't think you need the carapils with the crystal 20 in there.

Go a week left with dry-hopping. Can't wait to taste it! The hydrometer tasting was very good.
