I've been working on a Crispin Cho-Tokkyu clone. I'm not sure how close it will be. I got 18.5L close to 5 gallons of organic Japanese apple juice, added 1/2 lb sugar, and pitched WLP705. I brought the SG up to 1.065 so I could get a good ABV.

I had it in primary for 2.5 weeks then I racked it off to secondary. I got a reading of .990 when I racked it over. Here is a picture of it in secondary, it came out a little darker than I expected. I plan on leaving it in secondary for 2 weeks then sweetening with rice syrup.

Has anyone attempted a clone of this before? Any suggestions?
