So, I made my first batch a couple of months ago. Simple recipe:

5 gallons Kroger apple juice
sprinkle packet of Red Star Champaign yeast.
Ferment 2 weeks. Bottle.
It turned out to be 6% abv.

The flavor for the first month after bottling was not great, but I drank it because it was what I had! But magically, two weeks ago, they started to taste really good!

Right now I have some skeeter pee fermenting, but as soon as it is done, I will do another batch of cider.

Initially i saw room for improving the cider, but now that it is 2 months, it tastes so good I don't see much need to tinker. My only complaint is that it seems to give a headache if you have more than a couple!
 
Do you think that part of it is that you're starting to like dry cider? My mates have said the same for their cider though. The longer you can stand to leave it the better they say it is.
