Thinking of using heading powder for my kolsch in which I used Irish moss, cold crashed, then used bio fine to really clear it up. I'm bottling half with some additional yeast and kegging the rest. Concerned about head retention so I bought brewcraft heading powder which says it contains dextrose. I'm using carb tabs to bottle, but I'm not sure if I should use this heading powder if it has additional dextrose in it. I don't want over carbonation or get bottle bombs. How would I use this, or should I even bother? Northern Brewer said I should have no problem with head retention the way the beer is now, but I feel like I probably dropped out a lot of proteins. The instructions are vague and It doesnt say how much dextrose is in it. Thoughts?
