I am making a test batch of beer at 1.5 gallons for a summer ale. My question is how much lemon zest would be the right amount to not be too much and enough to notice a slight lemon hint? I plan on adding at the last 15 minutes to the boil. I has estimated .30 oz. may be enough?
 
I have used a 1/4 cup of zest with good results. Do not pack it in the measuring cup like brown sugar just loosely added to the top.
 
tonyscha I have always added citrus zest or peels during the last 15 min of the boil and each time got considerable flavor and aroma. One of the regular brews in my line up is a wheat ale that calls for dried orange peel and also some fresh zest. The orange shines through each time. I have also subbed lemon zest with the same result.
