I'm just beginning to design our HERMS. One PID for the HLT. 25-35' copper heat exchange coil in a 15 gallon tall boy kettle from NB. 15 gallon tall boy for MLT blah blah blah.

What I'm asking is what fittings are best for all of this? I would not like to weld anything if possible.

1/2" Copper coil for HX coil. That will be measured ID?
I'm using 1/2" 304 SS .049" thick for all other tubing.

1) I'm planning on putting the HX coil in and out near the top of the HLT, so I'm hoping I can do weldless fittings there. But how do I connect the SS to copper through the HLT with a good seal around HLT? The fitting world is vast and treacherous to wade through. Precise sizes would be great.

2) Auber has weldless RTD for the MLT.

3) Bargain fittings has weldless bulkheads for MLT and HLT

4) But what about the pumps connections? I'm going to have 3 way ball valves on most pump connections. Tri Clamps? To be honest I don't really know what these things are. If someone could take a moment to explain them, that would be great. Because just looking at them is hard to see the design reasoning.

5) And what about SS to flow valves? Sweat it on with some high quality flux and lead free solder?

6) And simple SS tubing connections? Good flux, slow heat and good solder? Can anybody quantify further?

Thank you for your time. I'm just trying to understand what I need to do because i ant to do it right the first time.

As to the bulkhead fitting, my HEX is a standalone and a lot smaller than you're planning, but the bulkhead could be the same. Mine is based off of Kal's The Electric Brewery which is based off the Blichmann-style fittings. They work awesome. Here's a link to my blog as well as Kal's site that shows how to assemble the bulkheads. Kal's site has excellent step by step directions so I'd definitely check it out.
