Hello all, I am planning on putting together a nice IPA with some hops that I haven't used frequently or at all...change things up a bit.
Doing a 5gal batch, malt bill will be 95% pale with a hint of Munich and a cara malt, pretty standard stuff. Around 1.065, finish dry at 1.010.
The main hop I want to use with this is Apollo, I really like the resinous quality I have picked up from it in commercial beers. I also have mosaic and sorachi on hand to help balance with some fruitiness. Also possible are Amarillo, Citra, and simcoe. Any feedback from those who have put some of these pairings together or have lots of experience with these hops would be appreciated!
