I am planning on doing a sour in the near future, and it’s been a while since I’ve added fruit to beer. Purées are great, but they’re pricey. Northern Brewer has these packets of “fruit powder” for sale. Has anyone used these? I’m concerned that they’ll taste processed. The benefit is that they are a lot cheaper.

Never tried them. But If you want to use real fruit but save some money maybe you could make a tincture yourself. Just be sure to account for the added abv of the base alcohol.
