HELP!!! Southern Pecan clone

I am trying to make a clone of southern pecan from Lazy Magnolia Brewing Company. Of course I have never tasted this beer but my brewing buddy just got back from the South and said it is great and has several pounds of roasted pecans in his freezer. Their web site gives the following information:

Original Gravity 13.5
Final Gravity 5.2
Bittering Units 19
Lovibond Scale 15
Alcohol by Volume 4.39%
Grains Maris Otter, caramel malt, wheat, roasted pecans
Hops Domestic nugget and willamette
Flavor Profile Sweet with a soft maltiness, lots of caramel flavors
Aroma Nutty and caramel
Ideal Serving Temperature 50 degrees F
Ideal Carbonation Level 2.5 Volumes



I was looking at Brew-target and just tried these numbers:

I need some help here
1. Is Nottingham the right yeast?
2. I am assuming their web site's gravity readings (13.5 and 5.2) are in PLATO would correlate to 1.055 and 1.020, however I am having a hard time coming up with a beer that will end up that sweet with their ingredients. I could add some dextran, Perhaps there are some other poorly fermentables, more caramelized malts?
3. I am not sure how much effect the pecans will have other than flavor/aroma. Two pounds will have about one ounce of sugar and 3-4 ounces of total carbs. Probably negligible but does anybody have an opinion on this?
4. Wheat to Maris Otter ratio?
5. Is Caramel 60 the right one, any thoughts?

Anyway, if anybody has ever done this or ideas for me it would be much appreciated!
