When making ginger beer i waste a lot of time waiting for the brew to cool from boiling down to 70deg.

Can i use a wort chiller like the alcoholic beer guys do? Also can i put the pot in a walk-in freezer? Basically can you cool the brew too fast?
 
I haven't done soda but I don't see why you couldn't use an immersion wort chiller. Put it in during boil to sanitize(last 10-15 min) and then use it to chill on down.
 
I keep see that its recommended to put it in 10-15min during the boil to sanitize. Wouldn't this affect the wort? Shouldn't it be sanitized first?
 
The boil sanitizes it.

My ginger soda is never boiled, so that wouldn't work for me though.
Chilling quickly, however you do it, won't harm it at all.
