I washed and stored yeast from my last batch and tomorrow I plan on brewing up two separate batches but use the same kind of yeast. My question is do I double my starter (instead of doing 2 cups water and 1/2 cup DME DOING 4 cups water and 1 cup DME) and use two of my pint mason jars of yeast? Or would one jar multiply to enough with a doubled up starter? Or should I just do two separate starters all together?

As long as you have the ability to equally split the starter there is no reason to make two separate starters, IMO.

You should visit www.mrmalty.com and select yeast from slurry and calculate your pitch rates for each beer and figure out how much starter/slurry you need.
