A recipe calls for California Select but I am not sure if my brew store has this. If they dont, is there a substitute or alternate name that I should look for?

also p.s. If I am halving a recipe, should I use the same amount of hops and yeast as called for in full? 5gal cutting down to 2.5gal...do I use the 5gal amount of hops/yeast or is everything halved?

Great Western makes California Select 2 Row. California Select 2 Row uses barley grown only in CA. It gives a "local" perspective. I would imagine Great Western's 2 Row would be a good substitute. It GW wasn't available, try Rahr 2 Row.

EDIT: If you are dead set in using a California only grain, there is Admiral Maltings.

Generally you would cut everything in half if feasible.
