Planning on brewing this later this week. My second BIAB. Thoughts?

Yeast: Bavarian Wheat 3056 (Wyeast)
Yeast Starter: No
Batch Size (Gallons): 3 gallons
Original Gravity: 1.044 (target)
Final Gravity: 1.009 (target)
IBU: 28
Boiling Time (Minutes): 60
Color: SRM 5.59
Primary Fermentation (# of Days & Temp): 10-14 days at 72
Additional Fermentation: n/a
Secondary Fermentation (# of Days & Temp): n/a

3 lbs American Pilsner 60%
1.5 lbs Wheat Malt 30%
.5 Honey Malt 10%

0.5 Saaz 60 min.
0.5 Saaz 15 min.
0.5 Cirta 5 min.

Irish Moss at 10 min.

That fermentation temperature is nearly at the top of the recommended range and it will encourage the yeast to work quickly. That will make it hard to control the temperature so it doesn't go up into the area where the yeast will produce off flavors and perhaps fusel alcohol. I'd try to start it in the lower end of its temperature range, probably near 65 F. and then after 5 to 7 days let it rise to 72 so it attenuates fully. For simplicity I might move the Citra to flameout but there isn't anything wrong with the 5 minute addition. If you can't chill really quickly you might get nearly the same with flavoring with the flameout addition.
 
I'm brewing this today. I've cut the honey malt in half and added another .5 pound of wheat. I think I'll go ahead and do the last hop addition at flame out.

As for temperature, it's getting warm here in Atlanta so I'll have to use the wet blanket approach. There is nowhere in my house where the temp. is consistently under 70. Even when we turn on the A/C, it's set at 78 so this will probably be my last chance at brewing a lighter beer unless I get a freezer or something like that.
