NOTES: Galaxy is one of my favorite hop varieties because every beer I've brewed with it has a distinct, juice flavor and aroma. This is the first SMaSH I've brewed with Golden Promise and it is a lot more tame than Maris Otter. I was expecting a heavier malt profile/flavor. However, it is actually quite clean and slightly sweet even with this beer finishing at 1.009. I think it plays well with the Galaxy. Not sure I would use a hop like Columbus, which I love but I think the heavy pine wouldn't go so well with the flavor Golden Promise will give you.

I know this is an old post, but have you attempted a SMaSH using Galaxy and any other grains? Curious, because I am looking to brew a Galaxy SMaSH shortly.
 
Wow that looks awesome. I just bought a pound of 2015 galaxy and this looks interesting. I love simple.
Do you think a couple of oz dry hopping with galaxy would work on this or be too much?
 
Cant over do it. I dry hop with about 8 oz. thinking of going higher.
