Hey everyone. So I have some ecy03, the farmhouse brett, and bug farm waiting in the wings for the next few brews. I also have some dregs from a few bottles of Sour in the Rye. Here is where I'm hanging up, my options are:
A) make a rustic saison with the ecy03, leave it as is, then make a separate sour using the bug farm.
B) make the saison, then pitch the dregs in secondary to get a more tart product, then make another beer using the bug farm
C) use saison Brett in primary, then pitch the bug farm and dregs in secondary.
Ecy is hard to get, so I am slightly concerned with keeping the "sanctity" of the strains, as far as pitching dregs and whatnot...should this not concern me?
I'm still new to the wild ales, so any advice is greatly appreciated!
