12lbs Belgian Pilsner
2lbs Clear Candied Sugar
.5lbs Belgian Aromatic
.75lbs Cara Pils

2oz Styrian Goldings @ 60min
1oz Hallertauer @ 10 min

White Labs WLP570

Mash @ 149 for 90 mins
Batch Sparge at 170 degrees

60 Minute Boil

All candied sugar to be added at 30 minutes

I keep it in the primary the entire time. Ferment for 2 weeks. Cold crash for 2 weeks @ 40-45 degrees, then bottle.

My OG on my last batch was 1.075 but it stills tastes great. OG should land around 1.081, I just need to adjust my crush a little. Anyways, this turns out pretty damn good. Think Weyerbachers Merry Monks, just somewhat dryer.

IMO, clear candi is a waste of money. Just use Table sugar. It is all just 100% fermentables in the end.

If your recipe called for the liquid candi sugar, note it contains water also, so it has a lower pppg (.032) than "Rocks" or granulated sugar (.046). You'll want to adjust.

Fermented out clean. Tastes good. No complaints here. I'm not to sure exactly what you mean 60 minutes boil for pilsner? All my hops were utilized properly, I reached my exact post boil volume. No DMS off flavors. Furthermore, my fermentation was done in 10 days. Let the yeast cleanup for an additional five then cold crashed. Still in primary on lees.

I got no problem with your fermentation profile. All my beers finish in 7-10... except one I've got seems stalled.

The DMS thing something I hear mentioned when using Pils. I do a 90 minute boil, but if it doesn't taste like corn, I think you're fine.

What was FG? ABV?

I think we were a bit confused if you were sharing a recipe or asking for feedback on one.

Just sharing. Sorry. I believe it finished pretty dry for the style at around 1.007.
