I started a solera project in a 60gal wine barrrel in 2/2012, and just pulled 15 gals a few weeks ago. Kegged 10 gals straight, but racked 5 to a glass carboy on 3lbs of canned cherry puree.

After 1 week on cherries got a small krausen which dropped away after another week. Question: how long should I leave it on the cherries before kegging? I plan to bottle from keg after force carbing. Thanks for any input.

If I were you, I would let taste decide. Pull a sample and compare it to your kegged version. Pay attention to the sweetness instead of the cherry flavor. I would think that your bugs would continue eating on the puree for a month or three.

Chuck P. recommends as soon as fermentation (or secondary ferm in your case) is complete. Won't do it any good sitting on a buch of fermented fruit for a long time
