Critique my smoked German style hefe

Yeah, I actually did an smoked American wheat last year with only two pounds of the beechwood smoked, and the smoke was pretty weak then. That's why I doubled it this time and went with the cherry as well. Brew day was yesterday, only hiccup I had was mashing for an extra 20 minutes while I...

Critique my smoked German style hefe

So, I really like Schlenkerla (in all of its forms), and was shooting for a partial mash of the same. I realize I won't get near the smokiness of a true Schlenkerla beer, but I'd like a decent amount. 6# Northern Brewer wheat LME 4# Briess Cherrywood smoked malt 1# white wheat 1oz...

How is my smoked American wheat recipe?

Anybody want to tell me how I could improve this? 5 gallon batch 6# Northern Brewer liquid Wheat extract 1# light DME steep 2# Weyerman smoked malt x 30 minutes at 155 degrees. I'm playing around with the hops, but am thinking Hallertau 1oz x 60 minutes 1 oz Hallertau at 30 1/2 oz at 15...

    Whats your fave Brown Ale

My favorite brown ale is Surly Bender. It is great it it's other forms as well, ie Coffee Bender and Moe's. Northern Brewer sells a bunch of Surly beer kits now, as well. Cigar City's Maduro is also pretty solid.

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Yeah, on the last page someone told me 1# DME = 1.1# LME. With that, my 6# LME needed the water to be scaled down a bit. I just dunno why I'm so far off target. . . BTW, after 4 hours 45 mins the fermentor is bubbling (only every 38 seconds). I only did the carapils for 30" between...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Just got done! My OG ended up being 1.051. I used 6# Northern Brewer Organic LME with a # of carapils. I started with a six gallon boil and ended up about 8oz from the target 5 gallons. Used Nottingham and pitched at 68 degrees. Put it in the swamp cooler, which was at 64. Anybody know why...

modifying brewers best american cream ale

Somebody correct me if I'm wrong, but I'd put the vanilla beans as you would a dry hop. Soak the pod in vodka, use a sanitized knife and scrape out the little beans, then add. Or you could do a vodka tincture with the beans, too.

    Knuckle Sandwich recipe?

I had it a year or two ago and it was ridiculously sweet and syrupy, which I couldn't get past. Nice hops, though. Did they change the latest batch? Sorry, I don't really have any info on the recipe, other than they had to have used tons of crystal malt in the past.

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

So, I'd been missing a coupler for my wort chiller, which I now have, and have the next few days off. Today I shall brew. I'm having some reservations with the dextrine malt. I'm told if you steep it by itself, it may add body and a nice head, but the starches will make it cloudy. Will...

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

Yeah, I figured this would be a good base to do single hops on. Thanks for finding me the extract conversion!

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

I'm planning on using this for more of a single hop beer, as I've got a pound of CTZ flower and Montueka pellets taking up a fair amount of room in our fridge, and gf ain't happy b/c I have about 4 other pounds. . . I'd like to do a batch with Montueka, as the new harvest should come out in a...
