    Give it a shot and tell us what you think! Breweries will never do it, because while it might be fast, it's not the most economical brewing method (extract is more expensive and you need to use more hops to make up for the shorter boil). But it's perfect for the time-strapped homebrewer!

    If it makes beer, it's brewing :-) Why do you do the full mash if you're using extract?

    I used to do something similar when I started brewing (before I had a wort chiller). I'd have 2 gallons in the kettle and top off with 3 gallons of water and let it chill overnight in the fermenter and then pitch the yeast. I may try your method on my next batch, especially if I can get better...

    Yeah, I hear ya. I'm in the same boat. Two hours for a 5-gallon batch? Not Bad!

    Yeah, I had trouble cutting the holes in my box, too. A Dremel or similar tool would have made the process easier! I drilled holes in each corner and then used a fine-tooth blade on the jigsaw.
