    So, I think I am going to brew this and some other saisons similar to it, I will keg condition some but others I will do a sacch yeast then long brett and then bottle condition with wine yeast, what do you guys add for sugar at bottling after you take a beer like this down to 1.006-1.000...

    Is it ok to ask a brewery for yeast?

    I have literally got gallons of yeast from one of the most popular breweries here in Alaska, they are usually stoked and always wanna talk beer. It would really surprise me if they turned you down. I'm sure its getting asked for free beer that gets old with them.

    Ya, thats what i am basing it off of. He is actually a good customer of mine but he is a very busy man so I hate to bug him about little stuff all the time. I have a ton of chips already but your right maybe I should get some cubes. Good idea on the pinot noir, I think I will do that.

    I am going to do the same thing, I am really getting into these Brett brews, not really sour but funky and benefit from aging, check this out. Its one of my favorite brews and I might clone it this weekend so it will be ready for my wedding in approximatly 1.5 years...

    I dont think I would try to brew outside, do you not have a garage? I have been brewing for awhile up here and my garage is unheated and its difficult enough for me especialy the clean up part. i still mash in my kitchen just to help hold the temp.

    That might be worth trying but I would need a really big cooler or alot of them. It sound more safe than what I have going I guess. I am also thinking about building a foam box and leaving it in the garage and using light bulbs inside for the heat. At least I could still do several batches at once..

    If I stuff a blanket in all the edges it stll runs a good amout of the day, I have to keep the room at 70 ish and the room outside is 50. so it has to run quite a bit. I usually have 4-8 batches going at once so i really dont want to but that many heaters.
