    I was lucky enough to have good teachers (Thank you Shady Grove Brewmaster!, and Bob Carbone), an excellent Study group that has met twice a month for over a year, and more importantly, real world judging experiance.

    I have used Lavendar quite extensivly. I toss it in just before flameout. and let it sit in the hot wort for 5 mins before chilling

    They are learning, and if you know ahead of time, They will special order waht you need. In fact I need to go up and get my Belgian Pilsner malt.

    Bottling vs kegging

    To me, only the really big beers get bottled. Barley wine, Russian Imperial Stout, OLd Ales... You can always bottle from the keg

    Adding Cacao Nibs AND Vanilla Beans?

    use just part of your nibs in the boil and then some mor ein secondary for added aroma. the nibs in the boil will add to the overall biterness as well.
