    I used to brew pretty late into the night (well past midnight) on my back patio. A few times there was a police chopper that would fly overhead at least 4 or 5 times in a row. I liked to believe that they were trying to scope out my operations. By the third time I'd just start waving at them.

A little late in the season for it, but it'll be good drinkin' by Thanksgiving (if it lasts that long - this is always a favorite so it goes fast once it's been tapped).     You can always keg and then bottle a few out of he keg itself after it's been carbonated. I usually keep some Grolsch style bottles around for that purpose. Or, a growler would work. For long term storage, you can just use regular bottles, if you want to age some. Just be sure to sanitize those.

    Just kegged this. My gravity dropped a few points during dry hopping, so my FG wound up being 1.008. A little drier than I wanted, but it still tastes amazing. Now comes the worst part: waiting for it to carbonate.

    Been wanting to brew something with Summit hops for a while. So, here I am, starting the boil! Had all kinds of weird problems today (spilled my sparge water, leaky hot liquor tank, sparge arm kept sinking), but we're finally making progress! And it smells delightful. Updates to come.

    It sure is a beautiful beer! Only alteration was that I used both 3711 and Belle Saison together. I'm pleased with the results. A little more of that saison funk that I'm used to than 3711 alone produces.

    Also, there are no late addition hops in that recipe. Seems like it could be a good idea to split the 3.5 oz dry hop addition into something like .5 oz at 5 minutes, 1 oz at flameout, and 2 oz as dry hop. Thanks for sharing, though!

    What I did last time was to put the pumpkin in a mesh grain bag and then adding it to the mash. Still got plenty of pumpkin flavor and no stuck mash. I had a similar experience to yours the first time I brewed this recipe.

    Cpa4ny, I brewed a Saison with that strain recently. I love it, but it was very reminiscent of tropical fruit. My opinion is that it would be out of place in this beer. But, then again, that's the joy of homebrewing - you do whatever you want with your beer!
