    Weldless brew stand.

    This is my weldless stand. It's made of Super Strut from Home Depot. this pic is from last spring. It's not a HERMS anymore. I've added a panel and a RIMS tube to heat the mash.

    My dad has been talking about a similar sap idea of replacing some of the water in a porter recipe with maple sap. You might save this idea till spring and tap some birch trees instead.

    Bell's is my favorite. Really rich and munichy. Strong too. Warms me up very nicely after freezing all evening in my tree stand.

    I do the same thing in the summer for lagers. I also aerate in the morning just to make sure the yeast are getting the O2 they need.

    This DMS thing is getting old.

    +1 on the rate of boil. I have always heard that a minimum of 8% per hour boil off rate is needed to drive off DMS. I have also heard that with pilsen malt around 15%/hour is a good rate to insure that your driving it off.
