    over/under carbonated

I have two beers bottled, an American Ale and a Wit. These were bottled almost 2 months ago. The Ale is under carbonated and the wit is over carbonated. Is there any way to save these beers? I was thinking maybe pouring the ale into a keg and force carbonating it. Suggestions? Anything I can do...

    How much lactose?

Bottling a cream ale later today. Trying to figure out how much lactose to add before bottling (5 gallon batch). Looking at various recipes, I am seeing anywhere from .15 lb to 1 lb. What determines, besides personal preference, the amount to use? Last time I used lactose (for a stout) I used .4...

    hose quck disconnects

I know tri clover fitting are preferred, but has anyone thought of (or used) Hansen fittings to connect hoses? Any thoughts on sanitation/cleaning issues with using these? I have access to these in stainless, which is more budget friendly than purchasing tri clovers.

    another stir plate build question

I have 6 of these fans. Are they good candidates for stir plates? My electrician friend says they will spin really fast.

    ball valve size

Building single tier with sanke kegs. Already started building and "acquired" 3-3/8" ball valves to use. Noticed that most are using 1/2".....problem. Hope not as I am nearly finished with the mash tun and kettle.

    expired yeast

Was shopping at my local homebrew shop looking for yeast and the owner gives me (free) a smackpack Wyeast American Ale which expired in mid November. The pack is expanded. I wasn't planning to use it, but was wondering if it's still good? Can I salvage it or should I just toss it?

    grain storage

A 1000lb sack of Honey Malt sprung a leak at work the other day and it was (almost) a complete loss. I managed to salvage ~35lbs of it before it all landed on the warehouse floor. It's now in 3 separate plastic bags in my brew room, but I want to store it in plastic rubbermaid/tupperware type...

    Fermentation chamber question

Planning on building a fermentation chamber using a mini fridge. Any advantage/disadvantage of using a smaller "cube" type fridge rather than "full size" mini fridge. Planning on building this chamber large enough to fit several carboys or primary buckets or my 15.5 gallon fermenter. I plan on...
