That's a big problem with radiant cooling kegerators. You should consider installing a small fan to circulate the air and create more of a balance throughout the fridge.

I rigged up a computer case fan to hang from the ceiling and pointed it at the cooling plate to circulate the cool air. I still get ice on my coils too, but I defrost after every keg change, so I don't get too worried about it.

Insulation... Yes, but only for the vertical collar. From what I've read, wood is not a very good insulator. I wouldn't have considered any additional insulation if I were sticking with only the stock fridge.

Hey, as you do that, check for frost on the cooling plate every couple of days. Mine gets loads of ice but I can get it down to 35 degrees, and regularly keep it at 37/38. It's most likely due to my shoddy job with the vertical collar.
