    That is something I've considered doing. It's very similar to my keg prep/closed transfer kegging process (with sanitizer, not water) so I'm already setup to do it. I'm just not convinced the risk of infection is big enough to spend that much co2 to eliminate 3 gallons of wild air head space...

    Quick question: If I chill and oxygenate in the evening but don't pitch yeast until the next morning, has all that lovely oxygen come out of solution and departed my fermenter? Or does wort have a great affinity for O2 and it stays in suspension (at least for 12 hours or so)? Background...
