    Taste concerns me more than color so it sounds like you have created a good path for me to follow. As for rum I'll probably use Bacardi Anejo. I would use Zacapa or Zaya but every year my Dad gives me a bottle of the Anejo for Christmas and seeing as I drink rum maybe once every couple of months...

    Irish Stout Extract in Primary - how long?

    My first brew was an Irish Stout extract kit. I did primary for 2 weeks and then Secondary for 2 weeks. I hit the target final gravity at 7 days but left it anyways. Turned out pretty good

    That wood be great. My brewing partner lives up in Acworth so he is also nearby. We have been wanting to get to know other local brewers to learn from. We may be info mooches but we at least always have good beer to offer :D
