    Auber SYL-2362 Alarms

    I contacted Auber Ins and they said that no such function exists on these PIDs. They are "universal" PIDs so designed to be relatively generic. The 2352 has alarms for deviation that the 2362 doesn't have, but none have the ability to trigger the alarm when the set temp is reached.

    No problem...but you don't need to steep for an hour though. Usually 20-30 minutes is all it takes. If you're going for the full hour, might as well put some base grains in there and call it a partial mash.

    Yes. "Snow Globe" effect is totally normal. It is caused by convection. I wouldn't be worried about the temp either. 66 ambient temp is fine. Wort temp may be a few degrees warmer, but you're still within range.

    Pilsner is generally less modified and probably slightly lighter in color than the Canadian. Many people do 90 minute boils when using Pilsner malt to drive off DMS precursors...although I've been told that with today's malting process, it really isn't necessary anymore.

    850g vs 550g

    I started with Mr Beer kits too. Great little fermenter and the Mr Beer HME makes some very good beers. Since you're already adding DME and running a hop schedule, I'd say go with the cheaper HME cans. Just bump up your DME addition if you want. Try steeping some grains to add a freshness to it.
