    My first all-grain

The 1.25 qt/lb is for mashing. You will need additional water to sparge and to reach your boil volume. I know there is method to determine how much sparge water will be necessary, but it escapes me at the moment (I'm sure you can find it on this forum) Dang - already answered while I was...

    Reusing and Saving yeast

    BeerAlchemy OG calculation?

I use BeerAlchemy and haven't had any issues with the OG calculations. Just for grins, I put your recipe in www.hopville.com and it turned out as an OG of 1.087. If you went to 6 lbs LME, you'd be at ~1.066. Good luck!

    too much yeast?

What was your grain bill, starting gravity, and volume? Did you make a yeast starter or pitch smack pack right in? Have you already kegged it or is it still fermenting?

    Immersion Chiller vs. Counterflow Chiller

I think many breweries use something like a CF chiller - at least they chill while transferring from one vessel to another. They probably filter too. I went from a CF chiller to an immersion chiller because I didn't like not seeing if the tubing was clean. I also found the CF chiller hard...

Have you used this yet? How stable is it with no diagonal bracing or supports in the center? Looks awesome!

    Weldless brew stand.

I think you can use either ball valves or needle valves, but needle valves should give you better control at lower volumes. Here is what I use ... http://bayouclassicdepot.com/nv108p_propane_burner_part.htm
