Apple varieties for cider and eating

I have some space in my yard to plant some apple trees. I would like varieties that would make a good cider but would also work for eating/baking etc. My current thought is winesap, McIntosh, and newtown pippin. Is there anything I’m missing with this combo?

How to maximize aroma from smoked malt

I want to brew a s’mores beer with smoke in the aroma, but not as much in the flavor. I brewed a couple batches with briefs cherry smoked malt and was very disappointed. I am going to try weyermann smoked malt this time. I can already tell that it smells smokier. I’m also going to try smoking my...

    Help with s’mores beer

im trying to brew a recipe for a s’mores beer that has good graham cracker and chocolate flavor for a competition. Is Maris Otter from Austin Homebrew good?

Their malt is about 70 cents cheaper per pound than other sites. It doesn't seem to have a brand name associated with it. Has anybody used this and can compare to other brands? I'm planning to make at barleywine/bitter partigyle and am using 28 pounds of malt, so this would be a difference of...

Is a 50' immersion chiller overkill for 5 gallon batches?

I have a roll of 1/2" x 50' copper tubing. I typically brew 5 gallon batches, so I'm wondering if it would be overkill to make it into one 50' chiller, or make 2 25' chillers and give one to a friend. Thoughts?

    Can fermentation start too fast?

I brewed two batches today via parti-gyle. Last Sunday I prepared a 1 qt. starter for WLP 500 w/ stir plate. I let it run 48 hrs, then put it in fridge until this morning. Started WLP 565 Wednesday, let run 48 hrs, then fridge until this morning. Chilled both batches to 70, decanted most of...

    Variable speed controller

I'm looking to convert to electric. I currently brew 5 gallon batches. I would like to build an electric HLT/BK and use a cooler mash tun in between. I'm looking for the simplest setup, and was thinking of using an element plugged into a variable controller so that I could just install a 4500...

I'm open to suggestions for a hop schedule for an IPA. I'm looking for resinous/piney/earthy/herbal and not citrus. I don't want my beer to taste like a grapefruit. Basically I want this beer to smell and taste like being in a witch's cupboard in a boreal forest. I have Nugget and...

Half barrel keg needed in Pittsburgh

Every year I brew beer for a fundraising tailgate that my friend throws to benefit Children's hospital. Another friend of mine has a keg that he lets me use, but this year I found out that he traded it for a quarter barrel after I had already brewed 15 gallons worth of beer. I could trade the...

I want to try making mead this fall, but have only ever tried Bunratty. Would anyone be willing to trade a bottle for some of my homebrew? I currently have 5 different styles in my beer cellar.

Here is my label: Two things that I would like to do, add realistic depth to the millstone and have better definition in the barley field. I use GIMP, and use to be moderately skilled, but I'm rusty.

    How long until great beer?

How many batches did it take until you brewed what you considered a great beer? So far I've brewed about 6 or 7 good batches, but not one that I considered great.
