No worries, luckily a hefe is one you want yeast in. You'll just have more than usual... You might be noticing the effects on your body from taking in more yeast... But that's something a significant other would complain about :)

My guess would be storing crushed grains allows for moisture pick up much quicker which is never good.

I don't think you should brew a wit to try and find an off flavor.. An American wheat would probably be better since it uses a clean yeast. Or a light lager...
