    If I remember correctly, co2 has a metallic taste to it. Your abundance of carbonation would support this. Reduce your psi, and your metallic taste should go away.

    Why isn't my beer lighter in color?

    The best way to produce a lighter beer using extract is to add most of the extract 10-15 mins from the end of the boil. But you will still have a hard time producing extremely light colored beer unless you switch to all grain.

    Fix this

    I agree, your specialty grain to base grain ratio is way off. Most 5 gallon batches MIGHT have a pound or two of specialty grains to roughly 8-9 lbs of base grain for an average sized beer. The hops could be contributing to the grassy profile, they have a grassy/piney flavor and aroma.

    Lesson learned: Buy an accurate thermometer

    At which you cannot calibrate in cold or boiling water. Thermometers are not always linear, so its false to assume that a thermometer calibrated at roughly 32 is also accurate at 150.

    Garden hose sadness

    Contrary to what the others have said, I believe I have isolated my plastic taste down to the garden hose, and it DOES mellow with time. Some couldn't even notice it in a brown I brewed, although judges jumped all over it. Give it a few weeks before dumping, there's a chance it might turn out...

    How many refrigerators/freezers do you have?

    1 in the kitchen, chest freezer in the basement for food. 30 cubic foot dual zone fermentation chamber in the garage capable of fermenting 26 gallons at a time, at 2 different temperatures.
