Still carbonated after a year and a half.

Soooooo, I put five and a half gallons of raw cider in the six gallon Carboy with one and a half pounds of brown sugar and champagne yeast about a year and a half ago and pretty much just neglected it ever since. When I decided to bottle it about a month ago the airlock was completely dry, and I...

    Bucket fermentaion

Smh, good call on the secondary, as not enough fermentation would take place fast enough to drive out the air. I don't rack to secondary for cider so I didn't think of that. I just leave everything in the primary, whether it's bucket or best bottle, for a month or so and then bottle. This, of...

    Bucket fermentaion

I could be wrong on this, but I think the concern may be that the buckets leave too much head space for air which is bad for cider. I don't understand this, as the CO2 produced in fermentation should force all the air out, but I do know I have a batch in a bucket now so hopefully it turns out...

Going to attempt hard cider for first time

I let a batch sit in primary for roughly a year and a half once and it turned out really great. I can't believe I managed to wait that long!

Going to attempt hard cider for first time

Four pounds of sugar in a five gallon batch is a ****-ton of sugar. I have gone two pounds of brown sugar in a similar setup and had no problem with headspace. And after three 24 oz bottles you would have trouble finding the bathroom in your own house! That stuff was quite potent!

Bottle priming with dark brown sugar

This thread is probably way too old to get me a response, but, I had a batch of Brewer's best robust porter going. It was time to rack to secondary and I wasn't real happy with my IG of 1.041 so I got the bright idea of dumping a POUND of dark brown sugar into the secondary before I siphoned...

Never dump your beer!!! Patience IS a virtue!!! Time heals all things, even beer!

Brewing from kits, I have only had one batch turn out "off". I wish I'd seen this before I drank all of them!

    Ewwwwww

Schlitz, since reintroduced using an older recipe, is pretty damn good beer. Couple that with the fact that a case is 9.99 out the door acrossed the state line in Indiana, and you have a winner, winner, chicken dinner! Several stores by me can barely keep the stuff on the shelves. Of course I...

Things that sound dirty but aren't

Northern Wisconsin town: Pound, Beaver, and Spread Eagle! I believe that there is a Pound-Beaver Rd. Spread Eagle has a bottomless nudie bar in it!

    How did you find us?

Doing research, after the fact, about a batch of Applewine I made. I believe I googled Champagne Yeast or Apple wine.

Thanks, Recluse. My FG was a little below 1.00 on my cheap hydrometer, but i wasn't sure how mucyh to trust that reading.

    Cheers!

Hello everybody. I am a high school math teacher in Southwest Michigan. I have brewed about 8-9 batches of Brewer's Best kit beers, and I found this site today while researching, after the fact, my first two batches of Applewine. I think I will probably spend a lot of time on here, as it...

    Man, I love Apfelwein

I found this site today while trying to research, after the fact, my first two bathches of Applewine. I didn't know it was applewine, I thought I was just making hard cider, but I added 2 lbs of brown sugar to each 5 gallons of apple cider. My question is, given 5 gallons of pure apple cider...

Cider from Kroger juice with chanpagne yeast not carbing

I use empty 24 oz. Red Stripe bottles for beer and cider. Honestly, it's almost too much cider for one evening, based on the results, but is perfect for the beer.
