    Well, that is inspiring. I was planning to bottle a dark wheat beer tonight, but I think I'll let it hang for the weekend to drop a few more points. Maybe longer. But I pulled a flat pint out of the primary and its a little bit of heaven.

    hibiscus is very strong and very dark a little should go a long way. You can get it at health food stores, frontier herbs has high quality loose leaf. Maybe a teabag worth for a gallon?

    I may have overpitched, but I swear in a 1 gal batch there is currently 2-3 inches after a week. it's pretty loose, but it's thick. 5-10 sounds like a very long time...I thought the minimum required by law was more like 1.5 years.

    Yeah. I'm planning on 3 or 4 champagne bottles with the rest in 7oz shorties for sampling to determine readyness. It's an experimental batch, so I guess I should experiment.

    What Should I Name My Son?

    This is one of the hardest decisions ever. Sometimes it helps to look at them. Squishy and all when they come out, but you get some sense of personality still. You have a good 24 hours to settle. Really until you decide to leave the hospital, or if you do homebirth maybe a week or two.

    Harvesting Erdinger Yeast: Disaster?

    Looking at the dregs in the bottle I thought this would take a while...I've got way too much headspace (though easy to aerate) in a 1 gallon bottle with about 1400 ml of water with 140 grams of DME added to the lees from the Erdinger. Cooked this up after breakfast and it's already pumping CO2...
