    Unless you have a very specific reason for moving it to the secondary why risk it? I use 3 to 4 weeks in the primary and then 4 weeks in the bottle. Lots of folks have different opinions, but those numbers work for me unless its something big.

    Pot size. Go bigger. If there is a chance you might want to brew 10 gal brews think larger pot. Keggle or something else. As far as the garage, I think you have gotten fairly solid advice. Think risk management and dial in your venting and monitoring as you see fit.
