An oatmeal stout that should be ready in time for St Patrick’s Day.

Sour … what do I keep doing wrong?

My original recipe that I based my batches on says to clean with soap and water and then sanitise. I will look for the alkaline brewers wash instead. I have never heard of it. Good information. Thanks, again.

Sour … what do I keep doing wrong?

Yes, I do diligently clean the work surfaces and devices with soap and water and rinse thoroughly. I do not set anything down once I’ve sanitised it. If I check the cooling temperature, for example, I re-clean and sanitise the thermometer. I am pretty careful about that. I never had a...

Sour … what do I keep doing wrong?

Wow! Thats wild and so interesting. I live by a conservation area but not a farm. Pretty interesting!

Sour … what do I keep doing wrong?

Okay, thank you for the information. That’s two folks now that said that so I have gone out and picked up StarSan and new tubing. On the bottle of potassium metabisulphite it says to sanitise use 1 tablespoon per litre of water. It’s not working for me though, so StarSan it is! Thanks.

Sour … what do I keep doing wrong?

I definitely will. I will also buy a new type of sanitiser such as Starsan (I think I’ve seen it written on this forum). I now have a renewed interest to start again on the beer making. I was enjoying it so much but then got fed up with the botched batches. My paranoid hat will be firmly on...

Sour … what do I keep doing wrong?

Thank you for that detailed information! Okay, I think I can figure out my culprit. The plastic tubing that I have is about 6 years old and ut is, indeed, looking rough. I use glass for fermentation and potassium metabisulphite for sanitation. I sanitise diligently both before use and after...

Sour … what do I keep doing wrong?

I have made 30 5 gallon batches of different made up recipes. I started out all right and enjoyed my brews. Then, the last 5 batches keep turning out sour. I can’t stand the taste so I have been dumping them out and trying again. Also, they were over carbonated despite using the calculator...

What is meant by ferment dry?

Good to know and a great suggestion to get an inkling of what it smells like so I know what to be looking for. Very helpful. I will write down your helpful suggestions in my notes. Thanks for your time and for sharing your knowledge. Also, I’ll go through Amazon. I like to support my small...

What is meant by ferment dry?

You’re a wealth of information! Thanks. Another thing that I didn’t know about. I went yesterday to the small brew supply place in town, but it didn’t have pH strips or a reader. So, now that I know it’s my lack of understanding and not the metre, I’ll follow up with learning to regularly...

    1st ginger beer

Thank you! I bottled in swing top glass pints. It’s in a warm place. I’ll empty them out today and ferment further. Ugh.

    1st ginger beer

Thank you for responding! Will do that today.

What is meant by ferment dry?

Okay, thanks for that. My pH reader is a cheapie so I won’t count on that. I’ll head out today and buy a new one and tested. Thanks for the support.

    1st ginger beer

Yikes! I just this morning bottled my ginger beer, as per the recipe on this forum, and I think that given what you’ve just said, I’ll be having bottle bombs go off in my basement. The SG read 1.052 after adding the sugar. Holy cow, I hope I didn’t screw up. Any thoughts on this? Or have I...

What is meant by ferment dry?

I got out my pH reader just now and it says 6.8. Is that high? Re: ingredient list I think I am not on the right track. It later calls for “Kmeta” and when I looked that up, it said that it’s potassium metabisulphite. It calls for Sorbate, which I took to mean potassium sorbate...

What is meant by ferment dry?

No Tilt, just a regular glass hydrometer. I took a reading again this morning and it’s the exact same. It’s a shame that it’s not fermenting after the extra care I put into the prep so that there’d be low to no sulphites or chlorine and as is, it tastes fantastic…but I wanted a bit of a bang...

What is meant by ferment dry?

Very interesting. I had no idea. Thanks for taking the time to explain. At least it’s an indication that something is happening in the bucket, despite the no bubbles. I live in hope.

What is meant by ferment dry?

That’s great information. Thank you. Yes, I have both of those to hand, as the recipe later calls for their addition. What a learning curve. Cheers for the help.
