    I've never used an all-in-one, but I wonder if you might squeeze (no pun intended) a bit of extra efficiency out of it by dunk sparging in a bucket instead and stirring the grains in the sparge water. This would kind of defeat one purpose of an AIO, since you'd have another vessel to clean.

    The amount of headspace you'll have left after removing a bottling wand is very close to what you will find in bottled commercial beers, which I guess is why lots of people consider it the correct amount.     It will take longer if it stays cooler, but 7 weeks isn't exactly rushing to try it. How much priming sugar did you use? IOW, how much carbonation were you shooting for? Lots of carbonation and a big head are not things that I usually look for in an imperial stout, but YMMV of course.

    Get yourself a pack of Farmhouse and leave the Belle Saison in your fridge until you want to brew a Saison. It will keep basically forever.

    Well yes and no... :) You see the sun. You see light on surfaces that the sun shines onto and reflects off of. What you don't see is a lit up sky, because, well, there's no sky.

    I believe there are calculators for that, but I tend to either not worry about it or guesstimate because I haven't stored any for a very long time yet. I know there are members who buy hops in much larger quantities than you're talking about and store them this way. Maybe some will chime in...
