    I don't think this procedure can "hurt" your beer, since all oxygen introduced in this phase are consumed by the yeast. Anyway beer changes over time, it's just a matter of enjoyment.

    Was winter time, fermented a little bit in the cold range, 12-15 C. No cold crash, no gelatin, 20 days. Probably settled down too much. The cake was near solid, no kidding.

    Nottingham, for sure. Only issue with it, drops really fast and makes a solid cake. It's supposed to be a good thing, right? Except if you want to bottle it. 2 months to get carb... 🙄

    Maybe it's because Belgian beer appreciators don't goes to every post saying that if you don't have "that phenolic bite" in a beer, it isn't a good beer.     Maturation is a thing. That X days grain to glass race is completely nonsense. Even with Kveik. The yeast needs time to reabsorb fermentation byproducts. Diacetyl rest, remember? Even if you're going to dry hopping and kegging, just leave it for the final days. Your beer are going to be much better!

    I think you're overthinking. 😁 Is there something that can oxidase? I wouldn't bother with it. Water... Use tap water and carbon filter. IDK why people use RO water. Only in case of too much minerals, maybe. And.... You're "Beer Baron", why are you doing hard seltzer? Go brew a beer! 😂
