Planning an Icelandic White Ale. Ideas?

Interesting. Except for the US-05, this resembles a Witbier, which they do mention on their website.

Can you add too much yeast?

The pitch rate for LalBrew New England is around 1g per liter for a 1.050 wort, so two packets will be good.

    Newbie with questions about spunding

A paintball or sodastream tank would be more economical than cartridges for the long term. You should be able to get an adapter for either to attach the mini regulator.

Pressure fermentation in the same keg that the beer gets served from.

Wow, that's some clear wort you've got there! What kind of brewing/filtering system are you using?

Does anyone by chance know the length of this duo tight fitting for shank?

Just measured one. The entire fitting is a little shy of 1.5 inches and the female thread depth (with the rubber washer) is around 3/8 inch.

Pressure fermentation in the same keg that the beer gets served from.

Release the pressure slowly then leave it alone for an hour or so before adding the dry hops. Otherwise a lot of foam can escape and create a bit of a mess. See here for an example.
