    Incomplete/Stuck Fermentation?

My fiancé and I have been homebrewing for about 3-4 years now and have about 30-40 batches under our belt. Fermentation of our most recent batch (MoreBeer all-grain Pliny clone) seems to have stalled a tad. We had a OG of 1.079 (a bit higher than expected), but after two weeks, has stalled at...

WLP004 - Is this normal attenuation???

I'm still relatively new to homebrewing, so take it easy on me. We brewed a red ale recently and fermented with WLP004 Irish Ale yeast (our first time using this strain). We mashed at 152* and the OG was 1.060. It finished at 1.020 - a bit on the sweet side, for our taste. The beer is...

    Splitting Brew Day???

Are there any downsides to splitting a brew day by mashing and lautering in the evening - say 7:00pm, then doing the boil the next morning - say, 10:00 am? Will leaving the un-boiled wort overnight cause it to spoil? Thanks.

Equipment Experts?! Chest Freezer Won't Get Cold

I use a temperature controlled frigidaire chest freezer as a fermentation chamber. When I'm not fermenting, the freezer is not plugged in. For the last couple of weeks, I've been using it at 68* to ferment my latest ale and it has been working great. A couple days ago, I lowered the inkbird...

Mashing and Brewing a Day Apart?

Is there anything wrong with doing a mash and sparge and letting the wort sit overnight night before brewing the next morning?

    Source of off-flavor?

I've been brewing all grain for a little over a year now and my brews seem to all have a common flavor that starts to develops after a couple weeks or so after kegging. My taste buds aren't too refined, but the flavor is almost a sharp bitterness and seems to become more pronounced as the beer...

    Yeast for DIPA

I'm planning to brew a super dry, clean very hoppy DIPA and am trying to figure out a good yeast to use that will not impart any additional flavor and accentuate the hoppyness in the beer. Something that has very high attenuation as well. Can you guys recommend a good yeast for this purpose...

    Amarillo, Cascade, Falconer's Flight

Of these three hops varieties/blends, is one better suited for bittering? I bought a lb of each because they were on sale and am trying to find recipes worth trying, but most I've seen all for something else for bittering. Anyone have a decent all grain APA/IPA recipe for these hops varietals.

Did I Mess Up?? Beginner Questions

I brewed a red ale 17 days ago and the OG was 1.066. I pitched a pouch of US-05 at 68*. I typically use liquid yeast starters and have only used dry yeast once before. This time, I completely forgot to rehydrate the yeast and pitched the pouch directly into the colled wort. The result is...

    Water Chemistry Calculator pH Discrepancy

I'd imagine this is probably a common issue, but I entered my next brew into several different water chemistry calculators (EZ Water, Brun Water, MpH, brewer's friend) and seem to be getting quite the range of predicted pH's. My malt bill is pretty basic (pale ale): 11 lbs 2-row and 1 lb...

    Stratified Yeast Starter Layers???

This is my first post and I'm relatively new to brewing- just started earlier this year and quickly transitioned to all-grain brewing. The last 8 or so batches I've done, I've made yeast starters. Last week, I made two starters for a 10 gal batch I'll be brewing and splitting next weekend to...
