    Darker Flavor For Spiced Winter Mead?

    Have you thought about adding burnt honey? Kind of a backwards bochet? It should give a light toffee flavoring, without being as strong as an actual bochet.

    Mold?

    I don't have much experience in brewing myself, having only just started, but mold shouldn't be able to grow in a container of alcohol. How long has it been fermenting?
