Nice brew! A question for lager brewers, can you force carbonate at the same time you are Lagering your brew or should it be 2 separate activities?

Sorry I'm just now responding. I'm going to try this on my next brew. But stupid questions first ... Why only 10 degrees at a time? What's wrong with setting a target temp on the beer frig and just let it do its thing? With each sequence, are you maintaining 2 psi or increasing it 2 psi...

When and where is the next one? It's time for me to make a trip to soda city, I guess.
