    Deschutes Schwarzbier Clone

I have not brewed this, but based on what I could find on online and my own perceptions, this is what I came up with. If you've had the beer, please critique accordingly! 5 gallon batch Grainbill 5 lb Avangard Light Munich 5 lb Briess Pilsen 8 oz Briess white wheat malt 8 oz roasted...

I ****ed this one up - I think I may have added too much Calcium Chloride.

I attempted a clone at Kostritzer. It was 48:42:5:5: Pilsen, Light Munich, Dehusked Carafa II, Carafoam, with Northern Brewer hops at 8.2% AA - half oz at 1 hour, half oz at 20ish minutes. I added 1 tsp yeast nutrient, 1/4 campden tab, 1/4 tsp Irish moss. Danstar Diamond Yeast. Here's where I...

    Is this ready for competition?

First AG, first lager, lightest brew I've done, and I have never entered a competition. It tastes great, spot on for a German Pilsner, and hit all my targeted numbers except FG (a little better attenuation than anticipated). Right amount of hoppiness, a hint of sulfur, and everything else...

    Incomplete starch conversion?

I did my second AG brew yesterday (actually did two brews, but this thread is about the first one). It was a golden ale with pils malt, 8oz crystal 10, 8 oz melanoidin. I'm concerned that I maybe didn't get a complete starch conversion. My mash temps were 152-154ish, but I didn't account for the...

German Pilsner finished dryer than expected. Why?

SG 1.048, FG 1.005. I was going to enter this into my first competition, but unfortunately it missed the mark on FG. I used Danstar Diamond yeast. I'm thinking it's either due to a long watery mash and a long boil, or its contaminated with wild yeast or something. I just kegged/lagered it last...

What are the most common styles entered into your local homebrew competitions?

Around these parts, I am seeing a lot of sours, Belgians, American ales, and *PAs, in that order. I am about to enter my first competition with a German pilsner... doesn't seem like very many people enter traditional styles, especially the lighter ones. Why is that? What are you seeing at the...

Lager fermentation went cloudy and lighter. Normal?

This is a SMaSH German Pilsner lager, Danstar Diamond yeast, 1.048 OG. I had a watery mash (BIAB) and during the preboil gravity reading, I thought the color was too light, maybe 1 SRM. After the boil it darkened to about 3 SRM. You can see in the first pic, before the fermentation took really...

Pilsner/Munich malt ratio in a schwarzbier

I have seen multiple sources with varying ranges of the Pilsner to Munich malt ratio for various schwarzbier grainbills. It kind of irks me when I hear people say that this style is just a darkened pils -it's really not. It's about a mildly roasty beer with a prominent Munich malt character...

Unintended banana flavor - what to do differently?

What am I doing wrong, guys? I did a Hefeweizen last winter because I kept bitching about how I can't find Paulaner... be careful what you wish for... I've been cursed by the dirty banana! Ever since, all my beers have been overpowered by banana esters with the exception of a blonde ale...

    Lacto or wild yeast infection?

I took the dregs and the trub from the last beer I brewed and added some water and sugar. This is what I got now. It smells kind of sour and fruity. Do you think it may be lacto or wild yeast?

Stuck 3724 fermentation. Temps or repitch?

The last time I used 3724 it finished fast and never got stuck. This time, I pitched very cool ~ 58-60F on 8/25. Very vigorous fermentation at first, and the carboy temps were 64-66F during that time. Then it stuck! I took it out of my kegerator and let it warm up to room temp, which fluctuated...

Going to be doing my first AG BIAB eKeggle brew - how can I simplify multiple brews in one brew day?

I am planning on brewing 3 lagers in September, all with a pale base malt. My eKeggle has a volume of 15.5g and it will be BIAB. I want to knock them all out in one day. One will be a Helles or Pils, one will be a schwarz clone (Koestrizer), and the third I haven't decided yet. Can I just do a...

Can't decide on a Belgian yeast. Please weigh in!

SG will be 1.050ish Golden Promise 90% Victory Malt 7% Honey Malt 3% Hops - 1oz Spalt, .25oz Centennial for 30 minutes. Can't decide if I want to do Wyeast Abbey II or Belgian Saison. I like both. This is for a wortshare, so I am not aiming for any particular style.

14% Carafa II Special in Black Ale test batch

Take a gander at the attached grainbill. I hit all the numbers spot on. Before pitching yeast it had a strong hoppy smell, now it is a strong roasted smell. It doesn't smell overdone. I wasn't looking at grainbill percentages when I decided to brew this, just color. So I hit the 27.1 SRM, but...

    Please inspect my panel build

I need to finish wiring the receptacle and XLR, but see pic below. Contactors are rated for 40a with a 24vac coil voltage. Transformer is multi primary with 24vac secondary; 120vac line to the red power line. Red power line is going into main power contactor and out to hot bus. Black power line...

This guy's brew panel seems off.

http://www.instructables.com/id/Electric-Brewery-Control-Panel-on-the-Cheap/ I've been following this guy's guide and when I went to buy parts I noticed there was no control transformer in the build. Worse yet, the contactors he used are only rated for 120vac. Without stepdown voltage, isn't...

    Locknut not water tight. Epoxy/caulking?

I am building an e-keggle. Just finished soldering (silver solder) the locknut for my element. It's not completely sealed. There is a small area on the top that appears to be wet, even when blowdried. I have already resoldered twice. The same area will not completely seal. Can I caulk or epoxy it?

    Grinding in an apartment

I don't have a shop area to grind off the top of my keg. I have 2 options. Either use my shop extension cords and do it outside, or do it in my kitchen area. What do you recommend? I am a little nervous about the neighbor tennants reporting me if I am seen outside doing this, but that is...

    1/4-20 thermocouple... grrrrrr

My PID stuff just arrived in the mail today and I realized that the K-thermocouple that came with it is too small. Apparently it is not 1/4 but rather 1/4 x 20. No idea what that means. I have a 1/2" NPT coupling and a 1/2" to 1/4" bushing. Is there a stainless bushing I can get, or what can I...

What's a good way to clean krausen from PET carboy?

I have a 6g PET carboy as my main fermentation vessel, and I usually one step it to the brim on bottling day. That gets rid of most, but not all of the debris and whatnot. The only stuff that's left is the dried krausen on the bottleneck/shoulder. I have a little coat hanger device and usually...
