    How long do you hold your cider in primary?

    I will second everything said here. 2-4 weeks primary, and rack it off of the yeast cake into secondary. Start to finish i would say 2 months minimum and the off flavors are pretty much gone. The longer the better, but i dont usually have patience for more than that :mug:

    BS Biomedical Engineering from Rose-Hulman Institute of Technology in Indiana. I work in Orthopedics R&D. I am not surprised at all that almost half of the homebrewers on here are Engineers!

    Sounds pretty tasty to me. I'd just be careful on the habanero so that you don't overdo it. I'd start with a couple ounces tasting daily and add till it tastes good. You can always add more but once you've put it in, it ain't coming out. Also i think that lemony goodness from the Sorachi Ace...

    Kegged beer question

    What build said. With CO2 in the headspace you're fine, especially for a stout. With an IPA you'd see some reduction in hoppiness probably, but for that beer, go for it. That'll taste really good come August.

    A lot of times when im doing a quick extract batch and doing a partial boil i just refrigerate half of my water on brew day. I cool my wort down to around 100 degrees, and then chuck it in the fermentor with the fridged water and voila its like a perfect 68 every time. YMMV but it does speed...

    And nothing else at all changed? Kegs didn't get knocked around, lines didnt warm up or anything of that sort? It is intriguing... If your regulator is working properly, and your beer has equilibrated to serving pressure then you really shouldnt lose any carbonation while your tank is...
